Cooking is fun. You can be creative, and when you make something good, it's great to share it with other people.
I've seen a few recipes for sliced potatoes like these, but never get around to trying them. Your son would probably like them, and they look really easy to make.

This looks very similar. I don't add chives and they are not connected to each other but other than that pretty similar.

The most difficult thing is timing everything to come out at the end at the same time. I seem to have gotten that down now.
Glad to hear the positive news. On the rare occasions I had to cook for the kids, I'd get pissed if they weren't ready to sit down to dinner the moment everything was just finished. Makes me appreciate the Mrs more.

2 updates.

1. My wife and I are heading up to Owen Sound, ON for 3 days (2 nights) starting tomorrow. We originally would have been in Watkins Glenn, NY enjoying the NASCAR race this weekend. That was going to be our 20th wedding anniversary trip. That of course was cancelled. So my wife came up last week with this idea. So off we go.

2. She is done with her chemo. The cancer is as gone as it is going to get. This particular cancer usually comes back. The best treatment option (not really that good) is stem cell replacement. She is not strong enough for that. The second best is whole brain radiation. They have ruled that out due to risk of dementia because of her previous brain injury in her car accident in 2017. So the 3rd option is an experimental drug (taken for the rest of her life) which may delay and slow the onset. They are working out the fiances of this with our insurance company and the various programs as the drug is quite expensive. My wife is in good spirits because she is done with the chemo.

Congrats on the 20th anniversary. I hope the medication works out. Watkins Glen is a nice track, and a nice area. Too bad that fell through, although I'm sure you're used to cancellations of plans.

We had an interesting time. It was a good time but not the trip we planned. The hotel was late checking us in. The boat ride was cancelled due to high winds. We could not get to the waterfalls due to construction.

But we enjoyed our time together and away from the every day life.

Only the late checkin could be directly blamed on 2020.

It was nice eating in restaurants again. Seeing how each one dealt with covid requirements. One steakhouse/roadhouse put a "Go Steak Out another table" on alternate tables so people would not sit there. One physically removed their tables. One just moved their tables apart. And one put plexiglass walls between booths. We had to wear masks except when we were sitting down. And had to provide our name and phone number for contact tracing.

Since mid-June, we've had the same, but with one exception, all the seating has been outside - either the regular outdoor seating they normally provide, or under a tent. In one case, a restaurant used a combination of tent seating, a deck, and limited indoor tables. And in one concentrated restaurant village nearby, they closed the streets, and all the seating was al-fresco.

We had that in Stage 2. We are now in Stage 3. Social distanced indoor dining permitted.

We have lots of city streets with closed right lanes so businesses could add a patio to their restaurant.

A lot of people are starting to catch on and are finally wearing masks, but there is a stubborn population that are dying to make a point of not wearing them.
