For years, I use to enjoy certain sauces and desserts. Like my mom, use to make some great spaghetti sauce for years until it started to taste watered down. Those store bought sauces, hardly taste great as the restaurant quality. Plus I'm partially picky on my foods, like I can't stand chunky tomatoes and onions in my sauces. So I hardly buy Ragu, Prego, etc anymore. So most likely, my taste spuds has changed through out the years and I have basically stop buying store brands and I enjoy the restaurants quality stuff. But after a while, eating out can get pricey and I miss the old home quality stuff.
I been wanting to work on my own recipes, for the past several months, I been playing with the some different stuff and of coarse researching stuff online and watching plenty of food network.
Not long ago, I had some friends and family over to try some stuff out and I wanted to know, which they were honest on how the taste and quality was and they told me they absolutely love it and said it taste better then restaurant quality. They want my recipes and I joked, it’s a secret and I didn’t want to hand it out. But I did and for some reason, when they try and make it. It wasn’t the same quality as mine and it still the same ingredients. But either way, the past couple of months I'm proud for trying and finally perfected my own spaghetti, marianna, alfredo sauce and hamburger seasoning. I’m still working on my salsa, it way to spicy for me and some people.
Now I have been working on some desserts. Couple of weeks ago, I made a key lime pie and it tasted so rich and good. Today, I tried making a lemon meringue pie, when it was finished and cooling. The lemon meringue was like soup. I traced my steps back, to figured out what I did wrong. I realize when I added the eggs, butter and lemon juice. I was suppose to turn off the heat and let everything melt in the pot, while whisking. I made the mistake, by leaving the heat on and letting the lemon acid, destroying the cornstarch. But the lemon did tasted great. So I’ll try that again soon, my next project is work on a Boston Cream Pie.
Have some of you here, at least try making or own home made recipes. I have some old family recipes, but to me they don't taste as good as they were in the past. That why I been tweaking the recipes, to make them taste better or at least for me now.
