Almost every story about Jackson identifies her as a "black woman" or an "African-American woman." Why do the news media feel it necessary to point out her race and her sex? They never refer to John Roberts or Neil Gorsuch or Brett Kavanaugh as a "white man" or Samuel Alito as an "Italian-American man."

We both know the answer to this. John Roberts, Neil Gorsuch, and Brett Kavanaugh are white men, who followed over 100 other white men onto the US supreme court. And that would be enough by itself. But that's been the history for every high position in this (and any other) country since the ascension of mankind; whether it's president, CEO, tribal leader, doctor, or lawyer. So yes, the first black woman supreme court justice will be noted, because it's notable.
I'm pretty sure that if you were black, or gay, or a woman, or Jewish, or native American, or Hispanic, or Muslim, you'd probably want to recognize another person like yourself who was the first to attain a position of note.
